Hundreds of truffle enthusiasts gathered in Eugene this weekend to celebrate the fungus, which experts say could become Oregon’s next big specialty food industry.

Truffles grow well in Oregon but the industry is still fairly nascent.

Truffles are a type of fungus with a strong, bold pungent aroma, often times but not limited to floral or citrus tastes. The mushroom is more common in Europe, but begins to take shape as a relatively new food movement in the United States, particularly Oregon.

A recent study by four truffle experts, including scientists, found that Oregon’s truffle production could net more than 200-million dollars in direct sales income each year.
