The distillery and tasting room will open in the Whitaker neighborhood this summer.
Thinking Tree Spirits is set to serve its first cocktails this summer, said Emily Jensen, one of the owners of the company. Construction is underway inside the building that used to be home to the Raven Moon Emporium, a rummage store.
… Using a 400-gallon system Thinking Tree plans to produce vodka, gin, rum and whiskey. Jensen said the whiskey will need years to age. She said the goal is to use organic potatoes for the vodka, and local grains and fruits in other spirits.
