Many food cart owners are making the change to traditional indoor restaurants, because of the benefits of a stable location and ability to sell liquor.

Food sales sometimes can provide a return on investment of between 20 percent and 30 percent, but liquor sales can return up to 300 percent, says Bo Kwon, owner of the Korean BBQ-meets-Mexican-food cart, Koi Fusion.

Kwon plans to move his operation into a brick-and-mortar restaurant in the next few weeks.
