Portland's Bamboo Sushi was rated the country's most sustainable restaurant by Food Republic.

"Being a sustainable sushi restaurant is a truly remarkable feat," wrote Chantal Martinau.
In addition to giving Bamboo Sushi credit for using only ethically raised fish from healthy fisheries, she also recognized the restaurant for its biodegradable takeout containers, efficient hand dryers and low-flow toilets.
