DECEMBER 2007: FORUM

Will an improved broccoli cost more?

I am looking at the picture of a long-necked head of broccoli [NEXT, NOVEMBER], and understand the value to the grower of improving the efficiency at harvest time. What does not seem to be considered is the cost to the consumer, as this vegetable, important to a healthful diet, is generally sold by the pound. I wonder how much additional weight we will be paying for what does not get consumed? Will it put broccoli out of the price range for the average consumer? Who will take these questions into consideration before this product goes on the grocer’s shelf?
